Environmental scientists and engineers tend to focus their study on pollutants of air and water—though we eat three meals a day on average. The Simpson lab is taking a new approach and specializes in using environmental engineering principles to examine harmful chemicals in our food. Our aim is to get more environmental engineers involved in this important area of research.
